Brownie brittles

This is a practical recipe because I use box brownie mixes. Usually try to get the more dark chocolatey ones. These chips can stay in a ziploc bag in room temp for a month or even more. Nice snack when you need a dessert or chocolate.


I am here adding citurs peels, but you don't have to. Lime and chocolate combination is not very common, but surprisingly delicious. I suggest you to try this recipe with both candied orange and the lime peels - or candied ginger. If you don't have any of these in hand, you can make without the peels, but much better with them. Once you get comfortable, you can add dried fruits, nuts etc. But try with lime peels first. Recipe will be at the bottom




Ingredients

  • 1 box of your favorite brownie mix - about 20 oz, if it's less adjust the water/coffe and oil ratios to 1/4 cup

  • 1/3 cup coffee - very strong, unsweetened, cooled down to room temp

  • 1/3 cup vegetable oil

  • 1 large egg

  • 1/2 cup candied lime or orange peels, coarsely chopped ( or you can use dried cherries, cranberries, nuts etc) - recipes included below/or you can use nuts etc

  • 1/2 teaspoon sea or kosher salt 

  • 1 tablespoon instant coffee or espresso powder - i like this way, you can skip it if you don't have any

  • Optional - 1/4 teaspoon chipotle powder or smoked paprika

  • Optional - 1/4 teaspoon fresh ground coriander

  • Optional - few drops of lime/lemon/orange extract

Instructions


  • Line a 12 x 17 baking sheet with parchment paper os use silicon mats

  • Mix all the ingredients together except lime peels and spread it as thinly and evenly as possible on the parchment lined baking sheet, especially the middle part 

  • Sprinkle sea salt on and chopped lime peels - i made half orange half lime here


  • Bake at 325 for 40 minutes

  • Remove from the oven and let it cool few hours.

  • Once cooled try to snap/crack them. If all are crisp, you are good. The ones closed to the edges should be done regardless. If they are bit chewy and not snapping, you have 2 options.

    • you can put those back to 350 oven for 10 minutes, and turn the oven off, and let it cool down in there.

    • or just have them like the way they are

This is the brand i like with chocolate chips and extra chocolatey
