Ingredients
12 oz ground(fine/medium) pistachio
3.5 os granulated sugar - i used, organic light brown
2 egg whites -medium or large egg
1 tablespoon pure vanilla extract
Optionally you could add 1/2 tsp good quality orange extract or orange zest
Optionally add 1 teaspoon ginger powder
Optional powdered sugar to sprinkle
Instructions
Preheat the oven to 350
Mix dry ingredients in a bowl using a spatula/whisk
Mix egg whites, vanilla extract well and add to the dry ingredients and mix well
Chill the batter while you cleaning up the kitchen. If you don’t chill the batter it becomes sticky.
Shape them into 1 inch balls and place them onto the sheet pan over parchement paper
Flatten the balls using back of spoon/thumb
Bake for 14 minutes in the middle rack
Don't over bake it becomes very hard
use middle rack so that bottom of the cookies dont get too brown
Take them out of oven, sprinkle some powdered sugar if you want
And let it completely cool
