Gluten free pistachio cookies - 4 ingredients

Ingredients

  • 12 oz ground(fine/medium) pistachio

  • 3.5 os granulated sugar - i used, organic light brown

  • 2 egg whites -medium or large egg

  • 1 tablespoon pure vanilla extract

  • Optionally you could add 1/2 tsp good quality orange extract or orange zest

  • Optionally add 1 teaspoon ginger powder

  • Optional powdered sugar to sprinkle



Instructions

  • Preheat the oven to 350

  • Mix dry ingredients in a bowl using a spatula/whisk


  • Mix egg whites, vanilla extract well and add to the dry ingredients and mix well

  • Chill the batter while you cleaning up the kitchen. If you don’t chill the batter it becomes sticky.

  • Shape them into 1 inch balls and place them onto the sheet pan over parchement paper

  • Flatten the balls using back of spoon/thumb

  • Bake for 14 minutes in the middle rack

    • Don't over bake it becomes very hard

    • use middle rack so that bottom of the cookies dont get too brown

  • Take them out of oven, sprinkle some powdered sugar if you want

  • And let it completely cool
