Oatmeal, carrot, banana and rum soaked raisins muffins: flourless, sugarless, oilless, gluten free

This makes about 12 muffins. Healthy snack, not too sweet.


Dry Ingredients

  • 1.5 cups rolled oats - same amount of almond meal worked as well i bet corn meal works too

  • 2 teaspoons cinnamon

  • 0.5 teaspoon ground nutmeg

  • 0.5 teaspoon ground turmeric

  • 0.5 teaspoon ground ginger

  • 2 tablespoons ground flaxseeds

  • 1.5 teaspoons baking powder

  • 0.5 teaspoon baking soda

  • 0.25 teaspoon kosher salt

Wet ingredients

  • 2 large eggs

  • 6 tablespoons almond or peanut butter

  • 1/3 cup honey

  • 2 teaspoons vanilla extract

  • 1 teaspoon almond extract

  • 250 gram very ripe banana

  • 250 gram shredded carrots

  • 0.5 cup dark rum or bourbon

  • 0.5 cup raisins or currants, cranberries

Instructions


Turmeric, ginger, nutmeg, flaxseeds and raisins are optional.

  1. Soak the raisins in a warm rum before few hours ahead or night before

  2. Preheat oven to 350°F and line a muffin pan with paper liners or grease each cavity with oil

  3. Add all dry ingredients to a food processor, and process on until the oats become flour-like, transfer the mix to a large mixing bowl

  4. Add bananas to the food processor, and process for few minutes until becomes creamy

  5. Add all of the remaining ingredients except for the carrots, and raisins, and process until the batter is smooth. You may need to stop and scrape down the sides of the blender.

  6. Transfer the batter to a mixing bowl and stir in the carrots, and drained raisins, try not to over mix the batter.

  7. Spoon the batter into the prepared muffin pan

  8. Bake for about 25 minutes or until an inserted toothpick comes out clean.

  9. Allow muffins to cool, and enjoy with the dark rum :)

If you double the recipe, I suggest keep the half in freezer if you are not going to consume in a week.
