A refreshing margarita with lot of flavours. Hope your spices are as fresh as spring, especially the sumac, must be pungent, fruity, darkish red.

For the margarita mix, all you need is fresh water, sumac and sugar. If you have turmeric(or saffron better), cardamom and chipotle - or any smokey dried peppers use them to add more depth.

Ingredients for the mix

2 cups of filtered or spring water

1/2 cup of sumac

1/3 cup of sugar

1/2 teaspoon of turmeric

1/8 teaspoon of cardamom

1 small chipotle - dried jalapeno

And for the margarita

%100 agave tequila blanco/silver (white tequila)

Pomegranate molasses

Directions

  • Add water, sugar and all other ingredients you have EXCEPT sumac into a small pot, heat until boils once and sugar has been melted.

  • Turn the heat off and add the sumac, mix well, put the lid on and let it steep for 30 minutes. If you steep more it gets bitter.

  • Strain the mix and let it chill. Save the sumac to use in salad dressings/sauces/rice/pasta or smoothies

Once chilled, make your own margarita the way you like. Here is how i like for this specific one;

  • 3 oz tequila

  • 2 oz mix

  • A generous splash of pomegranate molasses

Serve over bunch of ice, add a pinch of kosher salt into the glass.
