I don't like too sweet deserts, this one is no exception. Easy to make, no baking necessary and gluten free.
Ingredients
180 gram (1.5 cups) almond meal/almond flour
90 gram (2/3 cup) powdered sugar
20 gram (2.5 tablespoons) unsweetened cacao
1/4 teaspoon kosher salt
2 tablespoons amaretto
2 teaspoons almond extract
Instructions
Add almond flour and salt to a medium bowl
Sift powdered sugar and cacao into the bowl, using a whisk, mix it thoroughly
Add amaretto and almond extract, using a spatula mix well. Then using your hands knead the dough for 30 seconds
Shape the mix into a log (1 to 1.5 inch thick), wrap it up in cling wrap and keep it in fridge
To serve, just slice it and enjoy
or sift some cacao powder and Maldon sea salt flakes,
if you want to play further, consider adding cayenne pepper, instant coffee, turmeric, chopped candied ginger, pistachio
