Amaretto chocolate marzipan


I don't like too sweet deserts, this one is no exception. Easy to make, no baking necessary and gluten free.


Ingredients

  • 180 gram (1.5 cups) almond meal/almond flour

  • 90 gram (2/3 cup) powdered sugar

  • 20 gram (2.5 tablespoons) unsweetened cacao

  • 1/4 teaspoon kosher salt

  • 2 tablespoons amaretto

  • 2 teaspoons almond extract


Instructions

  • Add almond flour and salt to a medium bowl

  • Sift powdered sugar and cacao into the bowl, using a whisk, mix it thoroughly

  • Add amaretto and almond extract, using a spatula mix well. Then using your hands knead the dough for 30 seconds

  • Shape the mix into a log (1 to 1.5 inch thick), wrap it up in cling wrap and keep it in fridge

  • To serve, just slice it and enjoy

  • or sift some cacao powder and Maldon sea salt flakes,


  • if you want to play further, consider adding cayenne pepper, instant coffee, turmeric, chopped candied ginger, pistachio
